- 6 bone-in center-cut pork chops (about 1-inch thick)

Preheat your smoker to a medium-low temperature of 250 degrees Fahrenheit (or 120 degrees Celsius, if your device uses metric measurements). Insert the recommended amount of wood chips into the smoker according to the manufacturer's guidelines.

In a small bowl, mix together salt, brown sugar, pepper, paprika, ground mustard, garlic powder, onion powder, and oregano to create a blend of spices. Generously sprinkle this spice mixture evenly over both sides of the pork chops.

Carefully place the unstacked pork chops onto the smoker grate. Allow them to smoke for 2 hours and 30 minutes, or until they reach your desired level of tenderness.
