- 1 (28 ounce) can diced tomatoes
- 1 (9 ounce) package fresh cheese tortellini
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups baby spinach
- 1 tablespoon Parmesan cheese

Heat a generous amount of oil in a substantial cooking vessel over an intermediate temperature. Introduce the onion and garlic into the pot; allow them to become tender, approximately 5 minutes. Combine the sausage with the onion and garlic mixture; cook for an additional 3 to 4 minutes.
