Combine soy sauce, black pepper, vinegar, hot pepper sauce, and Worcestershire sauce in a large container; add sirloin slices and thoroughly combine to coat the meat evenly. Cover the container with plastic wrap and refrigerate for 8 hours or longer, allowing the meat to absorb the flavors.

Arrange sirloin slices in a single layer on wire racks, separating them for even cooking. Discard the marinade and proceed with smoking.

Place the wire racks into a smoker, following the manufacturer's guidelines for adding wood chips. Smoke at a low temperature until the edges of the sirloin slices have lost most of their moisture, leaving only a hint of it in the center. This process typically takes 6 to 8 hours, depending on the desired level of dryness.
