Slow Cooker Teriyaki Pulled Pork
Ingredients
  • 3/4 cup reduced-sodium soy sauce
  • 1/4 cup chicken broth
  • 1/4 cup pineapple juice
  • 3 tablespoons brown sugar
  • 3 tablespoons dry sherry
  • 1 tablespoon honey
  • 2 teaspoons minced garlic
  • 1 teaspoon sesame oil
  • 1 teaspoon minced fresh ginger
  • 1/2 teaspoon red pepper flakes, or more to taste
  • 1/4 cup cold water
  • 3 teaspoons cornstarch
  • 2 1/2 pounds pork shoulder roast
  • 1 teaspoon sesame seeds
Instructions
1
Combine the savory flavors of soy sauce, chicken broth, pineapple juice, brown sugar, sherry, honey, garlic, sesame oil, ginger, and red pepper flakes in a saucepan over medium heat. Whisk the chilled water and cornstarch together until you have a smooth, thin mixture, then add it to the saucepan and stir to combine.
2
As the sauce begins to simmer, bring it to a rolling boil. Once boiling, reduce the heat and let it gently thicken, stirring occasionally, for 3 to 4 minutes. Remove the sauce from the heat source.
3
Place a pork roast in a slow cooker and pour the teriyaki sauce over the top. Cook on Low for 6 to 8 hours, or until the pork is tender and easily shreds with a fork.
4
Once the pork has cooked to perfection, remove it from the slow cooker and let it rest for 5 minutes. Using two forks, shred the pork into tender, bite-sized pieces.
5
Return the shredded meat to the slow cooker and mix it with the sauce. Let it warm up for about 5 minutes, allowing the flavors to meld together.
6
Finally, sprinkle a pinch of sesame seeds over the top and serve the delicious teriyaki pork.
