Slow Cooker Spicy Chicken and Rice
Ingredients
  • 3 cups chicken broth
  • 1 1/2 cups converted long-grain white rice
  • 1/2 large white onion, sliced
  • 1 (24 ounce) jar salsa
  • 1 (4 ounce) can chopped green chilies
  • 1 (1 ounce) packet dry taco seasoning mix, divided
  • 2 skinless, boneless chicken breast halves
  • 1 (15 ounce) can black beans, drained

Start by filling a slow cooker with chicken stock, then add the rice, diced onion, salsa, and chopped green chilies. Mix in half of the taco seasoning at this point.

Next, season the chicken breasts with the remaining taco seasoning and place them in the slow cooker. Cover the cooker with a lid and set it to High heat.

Let the mixture cook for approximately 3 hours, or until the rice has thickened and most of the liquid has been absorbed. About 20 minutes before you plan to serve, switch the cooker to Warm mode.

Once the chicken is cooked, remove it from the slow cooker and slice it into smaller pieces. Then, stir in the black beans along with the chicken. Return the lid to the cooker and allow the beans to heat through before serving.
