Slow Cooker Southern Collard Greens
Ingredients
  • 4 bunches collard greens - rinsed, trimmed and chopped
  • 1 pound ham shanks
  • 4 pickled jalapeno peppers, chopped
  • 1/2 teaspoon baking soda
  • 1 teaspoon olive oil
  • ground black pepper to taste
  • garlic powder to taste
Instructions

Fill a large pot with approximately half its capacity with water, then submerge the ham shanks and as many greens as possible into the liquid.

Once the water starts to bubble, proceed with transferring the wilting greens to a slow cooker in layers, alternating them with ham shanks and jalapenos until the container is full.

Add a pinch of baking soda, drizzle in olive oil, sprinkle pepper, and sprinkle garlic powder to taste.

Seal the container, then bring the mixture to a rolling boil on High heat.

Gradually decrease the heat to its lowest setting and allow the dish to simmer for 8-10 hours.
