Slow Cooker Santa Fe Chicken
Ingredients
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14.5 ounce) can fat-free chicken broth
  • 1 (14.5 ounce) can diced tomatoes with green chile peppers
  • 1 (8 ounce) bag frozen corn
  • 1/4 cup chopped fresh cilantro
  • 3 scallions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper, or to taste
  • salt to taste
  • 1 1/2 pounds skinless, boneless chicken breast halves

Combine black beans, chicken broth, diced tomatoes with green chile peppers, corn, cilantro, scallions, garlic powder, onion powder, cumin, and a pinch of heat from the cayenne pepper in a large slow cooker. Add salt to taste and mix well.

Place a seasoned chicken breast on top of the bean mixture, sprinkling it with additional salt as desired.

Place the slow cooker in a low-temperature setting and let it cook for an extended period of time, approximately 9.5 hours.

Once the chicken is cooked through, remove it from the slow cooker and place it on a cutting board to shred into tender strands.

Return the shredded chicken back into the slow cooker and stir it gently with the bean mixture to combine.
