Slow Cooker Roast Beef with Gravy
Ingredients
  • 1 pound baby red potatoes, halved
  • 1 (16 ounce) package baby carrots
  • 1 yellow onion, quartered
  • 1 (10 ounce) can condensed cream of celery soup
  • 1 (1.5 ounce) package beef stew seasoning mix
  • 1 (3 pound) beef chuck roast
  • 1 (1 ounce) envelope onion soup mix (such as LiptonĀ® Beefy Onion)
Instructions

Position the potatoes, carrots, and onion around the periphery of a 5- to 6-quart capacity slow cooker.

Combine celery soup and beef stew seasoning mix in a bowl, whisking until the mixture is thoroughly blended and uniform.

Heat a saucepan over medium-high heat; sear the roast on both sides, taking approximately 3 minutes per side to achieve a golden brown color. Sprinkle the onion soup mix evenly over the roast, placing it in the center of the slow cooker and surrounding it with the vegetable mixture. Pour the celery soup mix over the roast.

Cook on Low for 8 to 10 hours.

Remove the roast from the slow cooker and place it on a cutting board; allow it to rest for 10 minutes.

Strain the remaining! from the slow cooker into a bowl, whisking it until smooth and uniform, taking about 1 minute to achieve this.
