Slow Cooker Puerto Rican Pulled Pork
Ingredients
  • 1 tablespoon vegetable oil
  • 1 (3 pound) boneless pork sirloin roast (trimmed and tied with kitchen twine, if necessary)
  • 1 cup orange juice
  • 4 limes, juiced
  • 4 cloves garlic, crushed and divided
  • 1 tablespoon ground cumin
  • 1 1/2 teaspoons coarse salt
  • 1 teaspoon dried oregano

Preheat the skillet over medium-high heat by heating oil in a large pan.

Use a sharp blade to make 3 to 5 punctures into the pork roast, then insert about half of the garlic into these holes. Sear the roast in hot oil until it is nicely browned, taking about 3 minutes on each side. Transfer the roast to a slow cooker.

Combine orange juice, lime juice, remaining garlic, cumin, salt, and oregano in a blender to create a smooth mixture; pour this over the pork. Allow the pork to marinate in the orange juice mixture for 10 minutes, then turn it over and let the other side marinate for another 10 minutes.

Set the slow cooker to Low heat and cook the pork for 8 hours.

Remove the pork from the slow cooker and place it on a cutting board. Use two forks to shred the meat into smaller pieces.

Pour the liquid from the slow cooker back into it, reserving 1 cup. Return the shredded pork to the slow cooker and pour the reserved liquid over it, stirring everything together.

Continue cooking on Low heat until the meat is once again hot and warm, taking anywhere from 15 to 20 minutes.
