Ingredients
- 4 cloves garlic
- 1 large onion, quartered
- 2 tablespoons chopped fresh oregano
- 1 tablespoon ground cumin
- 2 teaspoons ground ancho chile pepper
- 2 teaspoons salt
- 2 teaspoons ground black pepper
- 1 tablespoon white wine vinegar
- 1 tablespoon olive oil, or as needed
- 1 (3 pound) boneless pork loin roast
- 1 lime, cut into wedges

Combine minced garlic, chopped onion, dried oregano, ground cumin, diced chile pepper, salt, and black pepper in a blender. Add vinegar and gradually pour in olive oil until the mixture forms a smooth consistency. Stop the blender periodically to scrape down the sides and ensure everything is well combined.

Spread this marinade mixture evenly over the pork loin, coating it thoroughly. Place the coated pork loin in a slow cooker and cook on Low for 6 to 8 hours, or until it reaches fork-tender perfection. When the pork is ready, cut it into bite-sized pieces or shred it with two forks. Serve hot, garnished with a squeeze of fresh lime juice
