- 6 thick-cut pork chops
- 4 tart apples, peeled and sliced
- 1 large onion, sliced
- water to cover
- 1 quart sauerkraut
- 1/2 teaspoon fennel seed, or to taste

Preheat a large skillet over medium-high heat and place it on the stovetop. Sear pork chops in the skillet, 2 to 3 minutes on each side, until they reach a golden brown color. Remove the excess fat from the skillet.

Next, prepare the slow cooker by layering sliced apples and onions at the bottom of it. Place the browned pork chops on top of the vegetables, followed by a sufficient amount of water to cover the bottom layer of the crock.

Place the slow cooker on its highest heat setting and cook for 3 hours or on its lowest setting and cook for 6 hours. After the cooking time is up, add a spoonful of sauerkraut and a pinch of fennel seed to the mixture, then continue cooking for an additional 1 hour.
