- salt and ground black pepper to taste
- 1 (32 ounce) jar sauerkraut, drained and rinsed
- 1/2 (12 fluid ounce) can or bottle light beer
- 1/4 cup lightly packed brown sugar
- 1 small onion, diced
- 1 tablespoon butter, or more to taste, cut into small pieces

Preheat your five-quart slow cooker by spraying it with cooking spray.

Prepare the roast for cooking by sprinkling salt and pepper over its surface, then place it in the prepared slow cooker.

Cover the roast with a layer of sauerkraut, spreading it out evenly over and around the meat. Next, pour a generous amount of beer over the sauerkraut.

To add flavor and texture, sprinkle brown sugar evenly over the sauerkraut. Finally, place a sliced onion on top of the brown sugar and dot the surface with butter.
