Slow Cooker Pork and Sauerkraut with Beer
Ingredients
  • cooking spray
  • 1 (2 pound) boneless pork loin roast
  • salt and ground black pepper to taste
  • 1 (32 ounce) jar sauerkraut, drained and rinsed
  • 1/2 (12 fluid ounce) can or bottle light beer
  • 1/4 cup lightly packed brown sugar
  • 1 small onion, diced
  • 1 tablespoon butter, or more to taste, cut into small pieces
Instructions
1
Preheat your five-quart slow cooker by spraying it with cooking spray.
2
Prepare the roast for cooking by sprinkling salt and pepper over its surface, then place it in the prepared slow cooker.
3
Cover the roast with a layer of sauerkraut, spreading it out evenly over and around the meat. Next, pour a generous amount of beer over the sauerkraut.
4
To add flavor and texture, sprinkle brown sugar evenly over the sauerkraut. Finally, place a sliced onion on top of the brown sugar and dot the surface with butter.
5
Complete the seasoning process by sprinkling a pinch of salt and pepper over everything.
6
Cook on Low for 8 hours in your slow cooker.
