Slow Cooker Pineapple Pork

  • 1 (20 ounce) can unsweetened crushed pineapple in 100% pineapple juice
  • 2 tablespoons minced garlic
  • 2 tablespoons ground cumin
  • 2 teaspoons kosher salt
  • 1 teaspoon red pepper flakes
  • 1 pinch freshly ground black pepper to taste
  • 1 (3 pound) boneless pork butt roast

Combine pineapple, minced garlic, ground cumin, salt, and a pinch of heat from red pepper flakes in a bowl.

Add the pork roast to a slow cooker, then pour the pineapple mixture over it. Cover the container and cook on Low for an extended period of time, approximately 8 hours, or until the pork reaches a tender state and is slightly pink in the center. To verify doneness, insert an instant-read thermometer into the center of the meat; it should register at least 145 degrees F (63 degrees C).

Once cooked, carefully remove the pork roast from the slow cooker and cut away any excess fat. Using two forks, shred the meat into tender strands. Return the shredded pork to the slow cooker and mix it with the rich juices that have accumulated during cooking.
