- 1 bay leaf
- 8 slices of French bread
- 1/2 cup shredded Gruyere cheese
- 1/3 cup shredded Emmental cheese
- 1/4 cup freshly shredded Parmesan cheese
- 2 tablespoons shredded mozzarella cheese

Gather all the necessary ingredients beforehand.

Heat a generous amount of butter in a substantial, large pot over a medium-high heat setting. Add sliced onions; cook and stir constantly until they become translucent, taking approximately 10 minutes.

Sprinkle the cooked onions with a small amount of sugar; decrease the heat to a medium level. Cook, stirring frequently, until the onions are soft and have developed a rich caramelized flavor, which should take at least 30 minutes. Stir in minced garlic and cook until it releases a fragrant aroma, about 1 minute.

Add a splash of sherry into the onion mixture; scrape the bottom of the pot to dissolve any small bits of browned food that may have accumulated.

Transfer the cooked onions into a slow cooker and pour in beef broth. Season with a pinch of sea salt; stir in dried thyme and bay leaves.
