Slow Cooker Mongolian Beef
Ingredients
  • 1/4 cup cornstarch
  • 1 1/2 pounds beef flank steak
  • 3/4 cup water
  • 3/4 cup soy sauce
  • 3/4 cup brown sugar
  • 1/2 cup shredded carrots
  • 3 green onions, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon minced fresh ginger root
Instructions
1
Cover the base of a large, shallow dish with cornstarch; evenly coat the surface.
2
Dredge the flank steak in a generous amount of cornstarch, ensuring it is completely covered; place the steak inside a large, resealable plastic container.
3
Combine water, soy sauce, brown sugar, carrots, green onions, olive oil, garlic, and ginger in a bowl; pour the marinade into the bag with the beef and seal it tightly.
4
Store the marinating beef in the freezer until the day before you plan to prepare it.
5
Take the bag out of the freezer and place it in a bowl in the refrigerator to thaw for at least 24 hours.
6
Transfer the contents of the bag to a slow cooker and cover it; cook on Low for 4-5 hours or High for 2-3 hours, or until the beef is tender.
