Ingredients
  • 10 baby red potatoes, quartered
  • 4 large carrots, peeled and cut into matchstick pieces
  • 1 onion, peeled and cut into bite-sized pieces
  • 4 cups water
  • 1 (4 pound) corned beef brisket with spice packet
  • 6 ounces beer
  • 1/2 head cabbage, coarsely chopped

Begin by adding sliced potatoes, carrots, and chopped onion to the bottom of a slow cooker. Next, pour in water and position the beef brisket on top of the vegetable mixture.

Pour a small amount of beer over the brisket, followed by sprinkling the contents of the spice packet evenly over the top. Cover the slow cooker with a lid.

Place the slow cooker on High heat and let it cook for 7 hours, allowing the flavors to meld together. After 7 hours, stir in some shredded cabbage and continue cooking for an additional hour to allow the cabbage to become tender.
