Slow Cooker Hoppin' John with Greens
Ingredients
  • 1 cup dried black-eyed peas, sorted and rinsed
  • 1 cube vegetable bouillon
  • 1/4 cup hot water
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 smoked ham hock
  • 2 bunches collard greens, chopped
  • 1 tablespoon dried oregano
  • 1 tablespoon red pepper flakes
  • 2 cups vegetable broth
  • 5 cups water, or as needed to cover
  • 1 cup long-grain white rice
  • salt and ground black pepper to taste

Fill a large container with black-eyed peas and cover them with water, then place the pot on high heat and bring the mixture to a rolling boil for 2 minutes.

Reduce the heat to a low simmer and let the peas cook for an hour, allowing them to become tender.

In a separate bowl, mix together 1/4 cup of hot water and a vegetable bouillon cube until the cube is fully dissolved.

Transfer the bouillon mixture to a slow cooker and add the black-eyed peas, chopped onion, minced garlic, diced ham hock, chopped collard greens, dried oregano, red pepper flakes, and vegetable broth to the cooker.

Add 5 cups of water or as needed to cover all the ingredients, then cook on high for 5 hours.

About an hour before serving, stir cooked rice into the stew and continue to cook for another 1 hour.

Remove the meat from the ham hock, chop it into small pieces, and return it to the stew.
