- 1/4 teaspoon onion powder
- 1 (3 pound) leg of lamb
- 1/2 cup vegetable broth

Begin by extracting the outer layer of lemon zest and placing it in a mortar; set aside the zested lemon for later use. Next, add minced garlic, chopped rosemary, fresh thyme, parsley, and olive oil to the mortar. Mix well with a pestle until you have a smooth paste.

Now, season the lamb by gently patting it dry with paper towels. Then, evenly coat the lamb with the herb mixture you created earlier. Place the lamb in a 3-quart slow cooker and finish by drizzling the juice of the reserved lemon over the lamb. Add chicken broth to the slow cooker and cover it with a lid.
