  • 1 1/2 (12 fluid ounce) cans or bottles Irish stout beer (such as GuinnessĀ®), divided
  • 1 (4 pound) corned beef brisket
  • 1 1/2 cups brown sugar
  • 3 sweet potatoes, cut into chunks
  • 1 head cabbage, cored and coarsely chopped
  • 2 large sweet onions, chopped
  • 6 large carrots, chopped
  • 3 red potatoes, cut into chunks

Place one bottle of Irish stout beer into a slow cooker, filling it completely.

Next, thoroughly clean and dry the corned beef brisket, ensuring all surfaces are free of moisture.

Generously apply brown sugar to the brisket, making sure to cover both the top and bottom surfaces.

Gently position the brisket in the slow cooker, allowing it to touch the sides and bottom.

Arrange a selection of sweet potatoes, cabbage, onion, carrots, and red potatoes around the brisket in the slow cooker.
