- 2 1/2 pounds skinless, boneless chicken breast halves
- 2 1/2 pounds skinless, boneless chicken thighs
- 2 (7 ounce) cans diced green chile peppers, divided
- 1 large onion, diced
- 1 whole head garlic, peeled and chopped
- 3 tablespoons ground cumin
- 2 large limes, juiced, divided
- 1 tablespoon salt
- 1 tablespoon ground black pepper

Begin by placing a generous amount of oil at the bottom of your slow cooker. Next, add the chicken breasts and thighs to the pot, followed by a can of chile peppers, sliced onion, minced garlic, a sprinkle of cumin, and half of the juice from a lime. Add a pinch of salt and pepper to taste.

Cook on Low for an extended period, approximately 8 hours, or until the chicken becomes tender and falls apart easily.

Once the chicken is cooked to perfection, remove it from the slow cooker using two forks. Then, return the shredded chicken back into the pot.

Add the remaining chile peppers and the juice from the other half of the lime to the slow cooker. Stir everything together, ensuring all the flavors are well combined.
