- 1 tablespoon ground cinnamon
- 1 teaspoon salt
- 5 sprigs thyme, stemmed
- 1/2 teaspoon ground black pepper
- 1 (4 pound) boneless pork shoulder roast, trimmed
- 1/4 cup butter, divided
- 1 tablespoon all-purpose flour
- 8 hamburger buns, split
- 3 green onions, thinly sliced

Combine gochujang, a sweet and spicy Korean chili paste, with sautéed onion, vinegar, chicken stock, honey, brown sugar, grated ginger, soy sauce, mustard, garlic, cinnamon, salt, thyme, and black pepper in a large bowl. Mix everything together until well combined.

Next, coat the pork evenly with the gochujang sauce. Pour the remaining sauce into a slow cooker and add the pork, making sure it's fully submerged in the liquid. Cover the cooker and cook on Low for 8 hours, or until the pork is tender and shreds easily with a fork.

To prepare the buns for assembly, preheat your oven to 350 degrees F (175 degrees C). Remove the pork from the slow cooker and shred it with two forks. Transfer the shredded meat to a pot over medium-high heat, adding the sauce from the slow cooker.

Bring the mixture to a boil, then reduce the heat to a simmer. In a small bowl, mix 1 tablespoon of butter with flour until it forms a smooth paste. Combine the butter mixture with the sauce in the pot and cook, stirring constantly, until heated through and slightly thickened, about 5 minutes.

Transfer the sauce to a bowl with the shredded pork and mix everything together. Divide the toasted buns among individual serving plates. Top each bun with a generous portion of the pork mixture, followed by a sprinkle of green onions.
