Slow Cooker Corned Beef Stew
Ingredients
  • 1/2 pound baby carrots
  • 1/2 pound small yellow potatoes (such as Dutch Yellow® Pee Wee potatoes)
  • 1 sweet onion, cut into bite-size pieces
  • 4 cups water
  • 4 3/4 pounds corned beef brisket with spice packet
  • 3 tablespoons onion powder
  • 3 tablespoons garlic powder
  • 1 bottle Irish stout beer (such as Guinness®)
  • 1 medium head cabbage, quartered and leaves separated

Place a layer of baby carrots, potatoes, and onion at the bottom of a slow cooker. Fill the crock with water, making sure to cover all the vegetables.

Next, sprinkle both sides of the brisket with onion powder and garlic powder to enhance its flavor. Position the seasoned brisket, lean side down, on top of the vegetables in the slow cooker.

Pour a generous amount of beer over the brisket, followed by sprinkling the spice packet evenly over its surface. Close the lid and cook on Low for an extended period of 10 hours.

Once the cooking time is up, carefully remove the brisket from the slow cooker and place it on a cutting board.

Subsequently, add the cabbage to the remaining liquid and vegetable mixture in the slow cooker. Cover it again and cook on High until the cabbage becomes tender, taking anywhere from 30 to 45 minutes.

Finally, slice the cooked corned beef and serve it alongside the tender cabbage mixture.
