- 2 pounds lean ground beef
- 2 medium green bell peppers, chopped
- 2 small onions, chopped
- 2 (15 ounce) cans red kidney beans, undrained
- 2 (15 ounce) cans tomato sauce
- 2 (10 ounce) cans diced tomatoes and green chiles
- 2 (1.25 ounce) packages chili seasoning mix
- 1/2 cup shredded Cheddar cheese
- 1/2 cup sour cream

Prepare your 5- to 6-quart cooking vessel by placing a slow cooker liner inside it, ensuring the liner is securely attached to the bottom and sides of the container. Remove the excess liner material by pulling it over the rim, setting it aside for later use.

In a large cooking pan, combine ground beef, sliced bell peppers, and chopped onions. Heat over medium-high heat, stirring occasionally, until the ground beef is nicely browned and crumbly. Discard any excess grease.

Transfer the cooked meat mixture to the slow cooker liner, followed by the addition of canned beans, tomato sauce, diced tomatoes and green chiles, and a packet of seasoning mix. Mix the ingredients together using a spoon made from wood or plastic.

Cover the slow cooker and cook on low for 6 to 7 hours, or high for 3 to 3.5 hours, until the chili is hot and bubbly throughout.

Carefully lift the lid to allow any steam that has accumulated to escape. Gently stir the contents, then sprinkle shredded cheese and dollops of sour cream on top. Serve the chili directly from the slow cooker liner, making it easy to enjoy a convenient meal.
