Slow Cooker Chicken Chilli

  • 3 skinless, boneless chicken breasts
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14 ounce) can corn, undrained
  • 2 (10 ounce) cans diced tomatoes and green chiles (such as RO*TELĀ®), undrained
  • 1 (1 ounce) package ranch dressing mix
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 (8 ounce) package cream cheese

Position chicken breasts at the bottom of a slow cooker vessel. Pour cannellini beans, black beans, corn kernels, and crushed tomatoes over the chicken in that specific order. Sprinkle a blend of dried herbs and spices, including chili powder, cumin, and onion powder, on top. Place a block of cream cheese atop the mixture. Cook on Low for an extended period, approximately 6 to 8 hours, or until the chicken is tender enough to be easily pierced with a fork.

Extract the chicken breasts from the slow cooker and use two forks or cut them into smaller, manageable pieces. Combine the shredded chicken back into the slow cooker and mix it with the chili until well combined.
