Slow Cooker Cheesy Hash Brown Casserole
Ingredients
  • 1 bag (32 oz.) frozen diced potatoes
  • 1 (10.5 ounce) can condensed cream of celery soup
  • 1 small onion, finely chopped
  • 2 cups shredded Cheddar cheese, divided
  • 1 cup sour cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup kettle-cooked potato chips
Instructions
1
Combine the frozen potatoes, canned soup, chopped onion, 1 cup of shredded Cheddar cheese, a dollop of sour cream, a pat of butter, minced garlic, salt, and pepper in a spacious mixing container. Mix until everything is uniformly blended and pour into a large, slow-cooking vessel.
2
Place the lid on top and cook at high heat for 3 hours, stirring every hour to prevent scorching. Switch the slow cooker off.
3
Sprinkle the remaining 1/2 cup of Cheddar cheese over the top, cover it again, and let it sit for about 5 minutes, allowing the cheese to melt. Transfer the dish to a serving container and top it with crushed potato chips.
