  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 4 cups dry black-eyed peas
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Prepare the bacon by placing it in a large skillet over medium-high heat, stirring occasionally, until it reaches an even golden brown color, approximately 10 minutes. Remove the cooked bacon from the skillet and set it aside on paper towels to cool down, allowing you to handle it easily. Reserve the pan drippings.

Next, cook the onion and garlic in the reserved bacon drippings over medium to high heat until they are tender, taking around 5-7 minutes.
