Slow Cooker Beef Enchiladas
Ingredients
  • 1 pound lean ground beef
  • 10 (6 inch) corn tortillas, quartered
  • 1 1/4 cups water
  • 1 (1 ounce) package taco seasoning mix
  • 1 (12 ounce) jar chunky salsa
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 4 cups shredded Mexican cheese blend

Break ground beef into small pieces and place them in a large skillet over medium-high heat; continue to cook and stir until the meat is uniformly browned. Introduce water and taco seasoning into the skillet; lower the heat to a low setting and let it simmer for 15 minutes.

In a separate container, merge salsa, cream of mushroom soup, and cream of chicken soup together. Set aside 3/4 cup of cheese; mix the remaining cheese into the salsa mixture.

Layer a single serving of tortillas at the bottom of a slow cooker. Add a layer of ground beef mixture on top, followed by a layer of reserved cheese. Continue this process with the remaining ingredients, finishing with a single layer of tortillas and topping it off with the remaining cheese. Cover the slow cooker.

Cook on High for 45 minutes to 1 hour, depending on your desired level of doneness.
