Ingredients
- 1 tablespoon brown sugar
- 1 teaspoon chili powder
- 1 teaspoon ground paprika
- 1 teaspoon coarse salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon ground mustard powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 2 cups low-sodium beef broth
- 1 teaspoon liquid smoke
- 1 teaspoon Worcestershire Sauce
- 1/4 cup water, or as needed
- 1 (2 pound) beef brisket
- 2 medium yellow onions, quartered
- 3 large carrots, cut into 1-inch pieces
- 1/4 cup prepared barbecue sauce
Instructions
1
Combine brown sugar, chili powder, paprika, salt, pepper, mustard powder, onion powder, and garlic powder in a small bowl to create the dry rub.
2
Combine beef broth, liquid smoke, and Worcestershire sauce in a separate bowl to prepare the cooking liquid.
3
Add sliced onions and carrots to a slow cooker, then pour the cooking liquid over them to warm it up.
4
Rinse the brisket under cold water, pat it dry with paper towels, and apply the dry rub evenly to all sides. Position the brisket on top of the onions and carrots, ensuring the fatty side is facing upwards. The cooking liquid should just reach the bottom of the brisket; if necessary, add a little water to achieve this.
5
Cover the slow cooker and cook on Low for 8 hours. Remove the brisket from the slow cooker, transfer it to a foil-lined sheet pan, and trim any excess fat if desired.
6
Combine barbecue sauce and 1/4 cup of the hot cooking liquid from the slow cooker in a bowl. Mix well to create the barbecue sauce mixture.
7
Baste the fatty side of the brisket with this mixture, making sure to coat it evenly.
8
Preheat your oven's broiler and place the brisket on a baking sheet with 6 inches between it and the burner. Broil until the fatty edges start to crisp up, taking 2 to 4 minutes; keep an eye on it to avoid burning.
9
Remove the brisket from the oven and let it rest for 10 minutes before slicing thinly against the grain.
10
Use a slotted spoon to remove the vegetables from the slow cooker and serve them alongside the brisket.
