Slow Cooker Apricot Spiced Chicken
Ingredients
  • 1 pound skinless, boneless chicken breast halves - cut into 2 inch pieces
  • 4 cloves garlic, chopped
  • 1 large onion, chopped
  • 1 (28 ounce) can diced tomatoes
  • 3 fresh peaches - peeled, pitted, and sliced
  • 1 (15 ounce) can garbanzo beans, drained
  • 1 cup chopped dried apricots
  • 2 teaspoons ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 2 cups chicken broth
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 3 tablespoons chopped fresh cilantro
  • 1/3 cup slivered almonds, toasted

Begin by placing the chicken at the bottom of a slow cooker vessel. Next, add the minced garlic and chopped onion to the container, followed by the crushed tomatoes, diced peaches, cooked garbanzo beans, dried apricots, ground cumin, grated ginger, ground cinnamon, and ground coriander. Sprinkle the cayenne pepper on top of the mixture. Pour in the chicken broth, making sure that all ingredients are well-coated. Set the slow cooker to Low and let it cook for 5 hours.

Remove the cooked chicken from the slow cooker and keep it warm by placing it in a separate container. In another small bowl, whisk together the cornstarch and water until smooth. Stir this mixture into the slow cooker contents to thicken the sauce, which should take approximately 15 minutes on High. Once the sauce has thickened, return the cooked chicken to the slow cooker and reheat it gently. Finally, garnish with fresh cilantro leaves and sliced almonds before serving.
