Ingredients
- 2 onions, sliced
- 4 cloves garlic, smashed
- 2/3 cup apple cider vinegar
- 1/3 cup soy sauce
- 1 tablespoon brown sugar
- 1 bay leaf
- ground black pepper to taste
- 8 skinless, bone-in chicken thighs
- 2 teaspoons paprika
- 1 large head bok choy, cut into 1-inch strips
- 2 green onions, sliced thinly
Instructions
1
Combine the sliced onions, minced garlic, apple cider vinegar, soy sauce, brown sugar, and dried bay leaf in a slow cooker. Add a generous amount of black pepper to the mixture for added flavor.
2
Place the bone-in, skin-on chicken thighs on top of the onion and garlic mixture in the slow cooker. Sprinkle a pinch of paprika over the chicken thighs for a smoky flavor.
3
Cover the slow cooker and cook on Low for an extended period of 8 hours, allowing the flavors to meld together.
4
Switch the slow cooker to High heat mode and add the fresh bok choy to the chicken mixture. Continue cooking for another 5 minutes, allowing the vegetables to tenderize.
5
Garnish the dish with thinly sliced green onions for a pop of color and freshness.
