Ingredients
- 2 tablespoons all-purpose flour
- 1 teaspoon chipotle chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 (4 pound) skinless, boneless turkey breast half
- 1 tablespoon olive oil
- 1 acorn squash, seeded and cut into quarters
- 3 large carrots, peeled and cut into 3 pieces
- 2 red onions, quartered
- 6 unpeeled garlic cloves

Combine dry ingredients such as flour, chipotle chili powder, garlic powder, cinnamon, coriander, salt, and black pepper in a large container with a secure lid. Seal the bag and vigorously shake to ensure all components are well incorporated.

Place the turkey breast within the spice-filled container, seal it again, and perform a thorough shake to evenly coat the turkey with the blend of spices.

Heat a substantial amount of olive oil in a large, deep skillet over medium heat and sear the seasoned turkey breast until it develops a rich brown color on both sides, approximately 5 minutes per side (the meat will remain pink in the center).

Position acorn squash quarters, carrots, red onions, and garlic cloves at the bottom of a large, slow-cooking vessel. Position the browned turkey breast atop the vegetables and cover the cooker.

Allow the turkey breast to cook until both meat and vegetables are extremely tender, spanning 3.5 to 4 hours on high heat or 7 to 8 hours on low heat.

Transfer the turkey breast to a serving platter and permit it to rest for approximately 10 minutes before slicing.

Remove the squash and garlic cloves from their peels. Arrange the cooked vegetables around the turkey meat, then spoon the rich juices from the slow cooker over the turkey and vegetables to serve.
