Slow-Cooked Stovetop Pork Ribs
Ingredients
  • 10 pork spareribs
  • 1/2 cup soy sauce
  • 10 sprigs fresh parsley
  • 10 cloves garlic, crushed
  • 1 lime, juiced
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried oregano
  • 2 bay leaves
  • ground black pepper to taste
  • 2 limes, cut into wedges

Put the spareribs into a large container and fill it with just enough water to cover them completely. Add the soy sauce, three-quarters of the fresh parsley, minced garlic, lime juice, dried rosemary, oregano, and bay leaves. Bring the mixture to a rolling boil, then decrease the heat and let it simmer uncovered until all the water has evaporated, approximately 25 minutes.

Take out the bay leaves and continue cooking until the spareribs are nicely browned, turning them occasionally. Use a metal scraper to lift up the browned bits and softened garlic from the bottom of the pot, then toss them with the spareribs; this will help distribute the garlic flavor throughout the meat. Transfer the spareribs to a plate lined with paper towels to drain excess moisture.

Sprinkle the spareribs with black pepper. Serve them garnished with lime wedges and the remaining parsley, providing a fresh and vibrant finish to the dish.
