Slow-Cooked Spare Ribs
Ingredients
  • 8 meaty pork loin spareribs
  • 1 tablespoon light olive oil
  • 1 (14 ounce) can beef broth
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup lemon juice
  • 1/4 cup dried minced onion
  • 2 tablespoons vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon seafood seasoning (such as Old Bay®)
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon ground nutmeg
  • salt and black pepper to taste

Place the ribs in a large container and submerge them in water that has been lightly seasoned with salt. Bring the mixture to a rolling boil and cook for 45 minutes, or until the water has lost its heat. Remove the ribs from the liquid.

Heat a generous amount of olive oil in a heavy cooking vessel over medium heat until it reaches a state of gentle shimmering. Add the ribs to the pot and sear them for approximately 10 minutes on each side, or until they develop a rich brown color. Transfer the ribs to a serving plate.

Combine the following ingredients in the pot: broth, ketchup, brown sugar, lemon juice, finely chopped onion, vinegar, Worcestershire sauce, soy sauce, seafood seasoning, red pepper flakes, nutmeg, salt, and pepper. Stir the mixture to release any stuck particles from the bottom of the pan.

Reduce the heat to a low simmer and bring the sauce to a gentle warmth. Return the ribs to the pot and ensure they are evenly coated with the sauce. Cover the pan and let it cook over low heat for an extended period, or until the meat is extremely tender and easily falls off the bones, approximately 3 hours.
