Ingredients
- 2 tablespoons vegetable oil
- 1 1/2 pounds cubed pork stew meat
- 2 tablespoons all-purpose flour
- 1 (4.5 ounce) can diced green chile peppers, drained
- 1/2 (3.5 ounce) can chopped jalapeno peppers
- 1/2 medium onion, chopped
- 5 tablespoons tomato sauce
- 3 1/2 cups water
- onion salt to taste
- garlic salt to taste
- salt and black pepper to taste
Instructions
1
Preheat the skillet by heating oil in a large cast iron pan over high heat. Introduce the cubed pork into the skillet and cook until it's nicely browned on all sides and cooked through, approximately 15 minutes. Take the skillet off the heat source and permit it to cool slightly.
2
Add a generous amount of flour over the cooked pork. Utilize a wooden spoon to thoroughly coat the pork, ensuring that all pieces are covered evenly. Scrape the bottom of the skillet to dislodge any browned residue, which will enhance the flavor of the dish. Introduce chile peppers, jalapenos, and onions into the skillet. Combine tomato sauce and water in the skillet to create a rich sauce. Season the mixture with onion salt, garlic salt, and salt and pepper according to your preference.
3
Reheat the skillet over medium heat. Bring the mixture to a gentle boil, cover it with a lid, and cook for 30 minutes, stirring occasionally. Remove the lid and continue cooking for an additional 10 minutes.
