Slow-Cooked Pork Belly
Ingredients
  • 1 pound raw pork belly
  • 3 tablespoons vegetable oil
  • 1/4 cup light soy sauce
  • 1/4 cup dark soy sauce
  • 1/2 cup Chinese rice cooking wine
  • 3 1/2 ounces Chinese rock sugar
  • 1 (1 inch) piece fresh ginger, peeled and grated
  • 8 spring onions, sliced
Instructions
1
Cut pork belly into 2-inch wide strips, making sure they are uniform in size.
2
Boil a large quantity of water and then increase the heat to bring it to a rolling boil.
3
Add the pork slices to the boiling water and immediately lower the heat to a low simmer.
4
Allow the meat to cook for 10 minutes, or until it reaches your desired level of tenderness.
5
Remove the pork from the water and use paper towels to gently pat it dry, removing excess moisture.
6
Heat a significant amount of vegetable oil in a large wok over medium-high heat, creating a hot surface.
7
Carefully place the pork strips into the hot oil and cook until they are nicely browned on all sides, taking care not to let them splatter.
8
During this time, combine light soy sauce, dark soy sauce, rice wine, rock sugar, ginger, and spring onions in a large soup pot or stockpot.
9
Bring the mixture to a boil, stirring constantly to ensure the sugar dissolves properly.
10
Gradually reduce the heat to a low, gentle simmer and then carefully place the pork strips into the liquid.
11
Cover the pot and allow the meat to cook slowly, until it reaches a tender state that is usually 1 1/2 to 2 hours.
12
Throughout the cooking process, add water as needed to maintain a consistent level of liquid in the pot.
