  • 1 large sweet onion, sliced
  • 5 cups water
  • 1/2 cup soy sauce
  • 2 cloves garlic, minced
  • 1 (1 ounce) package dry onion soup mix
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour

Heat a generous amount of oil in a substantial skillet over an elevated heat setting, approximately medium-high. Introduce the lamb and cook until its exterior has achieved a rich brown color, roughly 5 minutes on each side. Transfer the lamb to a serving plate.

Add the onion to the skillet and cook until it has undergone a light browning process, approximately 5 minutes.

Transfer the onion to a slow cooker and position the lamb on top. Combine water, soy sauce, garlic, and onion soup mix in a bowl and pour the mixture over the lamb. Cover and cook on Low for 8 to 10 hours.

Remove the roast, cover it lightly with a layer of foil, and allow it to rest for 20 minutes before carving.
