Place the briskets in a large pot, ensuring they are fully submerged in liquid. Sprinkle one of the spice packets evenly over the top and set aside the remaining packet for future use. Next, pour in a generous amount of beer before adding enough water to cover the briskets by approximately 1 inch. Add a few peppercorns, some minced garlic, and a handful of bay leaves to the pot. Cover it and bring the mixture to a rolling boil.

To proceed, reduce the heat to a medium-low setting. Continue to simmer the briskets for an extended period of time, periodically checking on them every hour and adding more water as needed to maintain a covering liquid level. This process should take at least 4 hours or up to 5, depending on the desired level of tenderness. The briskets should be tender and easily separable with a fork.

Once the briskets have reached the desired level of tenderness, carefully remove them from the pot and transfer them to a cutting board. Allow them to rest for about 10 minutes, during which time they will firm up slightly. Slice or shred the meat into desired portions and arrange them on a serving platter.
