  • 1 large onion, cut into thick slices and separated into rings
  • 5 carrots, peeled and cut into chunks
  • 4 cloves garlic, coarsely chopped
  • 1 (16 ounce) can tomato sauce
  • 1 cup barbeque sauce
  • 1 cup beef broth

Next, heat a generous amount of oil over medium heat in a substantial, heavy-bottomed cooking vessel that is suitable for oven use. Add the ribs; cook until they develop a rich, caramelized crust on all sides, approximately 5 minutes. During this time, work in batches if the pot becomes too crowded, and sprinkle the ribs with salt and black pepper as they brown.

Transfer the browned ribs to a paper towel-lined plate to remove excess moisture and allow them to drain.
