  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 pound skinless, boneless chicken breasts
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced

Prepare the marinade by mixing together olive oil, freshly squeezed lime juice, chili powder, ground cumin, garlic powder, salt, and black pepper in a bowl. Add the chicken pieces to the marinade and gently combine until they are evenly coated. Cover the bowl with plastic wrap and refrigerate, allowing it to infuse for at least 4 hours or overnight.

Heat a preheated cast iron skillet over medium-high heat. Carefully add the chicken to the hot skillet, reserving the marinade for later use. Cook the chicken until it reaches an internal temperature of 165 degrees F (74 degrees C), which is indicated by the chicken being no longer pink in the center and the juices running clear, approximately 6 to 8 minutes per side.

Remove the cooked chicken from the skillet and slice it into thin pieces. Set the chicken aside on a plate.

In the same skillet, heat some olive oil over medium heat. Add sliced onions and bell peppers to the skillet, along with a spoonful of the reserved marinade. Cook and stir the mixture until the vegetables are tender and soft, taking about 5 to 7 minutes.

Return the cooked chicken back into the skillet and cook for an additional 2 to 4 minutes, or until it is warmed through.
