Ingredients
- 1/4 cup olive oil
- 1 medium lime, juiced
- 3 tablespoons chopped fresh cilantro
- 2 tablespoons finely chopped onion
- 3 cloves garlic, finely chopped
- 1 1/2 teaspoons ground cumin
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 (8 ounce) boneless New York strip steaks, cut into thin strips
- 8 (6 inch) white corn tortillas, or more as needed
- 1 (8 ounce) jar salsa
- 1 (8 ounce) package shredded Mexican cheese blend
Instructions
1
Combine oil, lime juice, cilantro, onion, garlic, cumin, salt, and pepper in a bowl to create a marinade. Place the mixture into a resealable plastic bag and add steak strips, ensuring they are well-coated with the marinade. Remove any excess air from the bag and seal it tightly. Refrigerate for 4 to 8 hours, allowing the flavors to meld together.
2
When you're ready to cook, preheat a large skillet over medium heat. Add the steak and marinade to the skillet, stirring occasionally until the steak is browned and cooked through. This process should take 15 to 20 minutes, at which point all the liquid from the marinade will have been absorbed.
3
Serve the cooked steak on tortillas with your favorite salsa and a sprinkle of Mexican cheese.
