- 3 pounds beef sirloin tip roast
- 4 cloves garlic, peeled and halved
- 1 teaspoon coarsely ground black pepper

Preheat your oven to 400 degrees Fahrenheit, or 200 degrees Celsius. Wrap the roast tightly with kitchen string.

Cut eight shallow cuts around the perimeter of the roast, being careful not to cut all the way through. Place a small clove of garlic into each incision, followed by a sprinkle of black pepper.

Position the roast on a rack in a roasting dish, allowing air to circulate underneath.

Roast the meat in the preheated oven for 20 minutes. Decrease the heat to 325 degrees Fahrenheit, or 165 degrees Celsius, and insert a meat thermometer into the center of the roast. Continue cooking for approximately one hour, or until it reaches your desired level of doneness. The thermometer should register 140 degrees Fahrenheit for medium.

Remove the roast from the oven and loosely cover it with aluminum foil. Allow it to rest for 15 minutes, then slice against the grain using a sharp knife. Use the juices that accumulate in the roasting pan to make a rich gravy.
