Simplified Beef Bourguignon
Ingredients
  • 2 pounds boneless beef chuck roast, trimmed and cut into 1-inch cubes
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 4 slices thick-cut hickory smoked bacon, cut into small cubes
  • 1 medium white onion, cut into 1/2-inch dice
  • 2 cloves garlic, minced
  • 1 (8 ounce) package sliced baby portobello mushrooms
  • 2 tablespoons tomato paste
  • 2 cups reduced-sodium beef broth
  • 1 cup dry red wine
  • 1 pound carrots, cut diagonally into 1/2-inch slices
  • 2 tablespoons all-purpose flour
  • 1/2 cup chopped fresh flat-leaf parsley

Combine the beef pieces, salt, and pepper in a medium-sized bowl and put it aside momentarily.

Heat the bacon in a Dutch oven over an elevated heat setting until the fat is released and the bacon starts to develop a golden hue, approximately 7 to 8 minutes. Add the seasoned beef to the bacon and cook, stirring frequently, until it is nicely browned on all sides, also around 7 to 8 minutes. Introduce the onion into the mixture and cook, stirring constantly, until it begins to soften slightly, roughly 2 to 3 minutes. Incorporate the garlic into the mixture and cook, stirring with great intensity, for just 1 minute.

Add the mushrooms and tomato paste to the mixture and cook, stirring occasionally, for about 4 minutes. Stir in the broth, wine, and carrots and bring the mixture to a rolling boil. Decrease the heat to a lower setting. Cover the Dutch oven and cook for 40 to 45 minutes or until the beef is tender enough to be pierced with a fork.

Remove the lid and take 1/2 cup of broth from the Dutch oven to a 1-cup measuring glass. Whisk the flour into the broth until it is completely incorporated and smooth. Stir the flour mixture back into the beef mixture and cook, stirring constantly, until it thickens slightly, approximately 4 to 5 minutes. Sprinkle the dish with chopped parsley and serve it immediately.
