Fill a large container with ice cubes and water, then place it aside for now

. Next, bring a massive pot of water to a rolling boil.

Using a sharp knife, carefully make an 'X' cut in the bottom of each tomato to help loosen the skin.

Gently place the prepared tomatoes into the pot of boiling water and let them cook for a short period, typically between 10 to 40 seconds.

Immediately transfer the tomatoes to the bowl of ice water and allow them to chill for a couple of minutes. Once cool enough, you can handle the tomatoes and begin peeling off their skin.

Cut each cooled tomato in half lengthwise, then carefully remove the seeds and discard them. Finally, finely chop the remaining flesh of the tomatoes.
