Ingredients
- 1 quart fresh strawberries, hulled
- 1 (9 inch) pie crust, baked
- 1 cup white sugar
- 3 tablespoons cornstarch
- 3/4 cup water
- 1/2 cup heavy whipping cream
Instructions
1
Collect and prepare all necessary ingredients.
2
Place half of the strawberries inside the pre-baked pastry crust. Set aside the remaining strawberries in a medium-sized saucepan.
3
Add granulated sugar to the saucepan with the strawberries; place it over medium heat and bring the mixture to a rolling boil, stirring constantly throughout the process.
4
In a separate small bowl, mix cornstarch with water until well combined. Gradually pour the cornstarch mixture into the boiling strawberry mixture, stirring continuously to avoid lumps.
5
Once the mixture starts to thicken, reduce the heat and let it simmer for approximately 10 minutes, stirring constantly to achieve the desired consistency.
6
Pour the cooked strawberry mixture over the remaining strawberries in the pastry shell. Refrigerate until chilled and set, for at least 3 hours.
7
Before serving, use an electric mixer to whip the cream in a medium-sized bowl until it reaches soft peaks.
8
Serve each slice of pie with a generous dollop of whipped cream on top.
