  • 2 large eggs, beaten

  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon ground black pepper
  • 14 3/4 ounces leftover cooked salmon, flaked
  • 2 tablespoons butter, or more as needed

Start by placing half a cup of bread crumbs on a flat surface, such as a plate. Transfer the remaining 1 and a half cups of bread crumbs to a large container, like a mixing bowl.

Next, add the chopped parsley, green onions, eggs, dill, lemon juice, and black pepper to the bread crumbs in the mixing bowl. Mix everything together until it's well incorporated.

Now, add the salmon to the mixture and use your hands to break it up into small pieces. This will help distribute the ingredients evenly.

Form the mixture into eight equal-sized patties, each about 1 and a half inches thick.

After that, take the patties and dip them into the bread crumbs on the plate to coat both sides evenly.

Heat butter in a large skillet over medium heat. Cook the salmon cakes in batches, adding more butter as needed to prevent them from sticking to the pan. Continue cooking until they're golden brown and crispy, flipping them over every 3 minutes on the first side.
