Simple Russian Blini

Collect and prepare all necessary components for cooking.

Combine flour, salt, and baking powder in a container to create a dry mixture.

In another bowl, use an electric mixer to blend 3/4 cup plus 2 tablespoons of milk, one egg, and 1 tablespoon of melted butter until they are well incorporated.

Gradually add the wet ingredients to the dry mixture, stirring until everything is fully merged and there are no lumps.

Melt 1 tablespoon of butter in a large, deep pan over medium-low heat. Cook several blini at once and use a spoon to drop small amounts of the batter, one tablespoon at a time, onto the heated pan.

Allow the blini to cook for 1 1/2 to 2 minutes, or until they start to form bubbles. Flip them over and continue cooking for another minute, or until they are golden brown.

Transfer the cooked blini to a paper towel-lined plate to help absorb any excess butter that may have been left behind.
