Ingredients
- 2 pounds pumpkin, peeled and cubed
- 4 cups chicken broth, divided
- 1 teaspoon sugar, or more to taste
- salt and freshly ground black pepper to taste
- 1 (5.3 ounce) container Greek yogurt

Combine the pumpkin with approximately one-third of the chicken broth in a deep pan over medium-low heat. Gradually bring the mixture to a gentle simmer, with the lid covering it, until the pumpkin is tender and easily mashable, approximately 15 minutes.

Carefully remove the pan from the heat source and use an immersion blender to thoroughly blend the pumpkin mixture until it reaches your desired consistency. Then, add the remaining chicken broth, granulated sugar, kosher salt, and freshly ground black pepper to the pan. Continue cooking the mixture for another 5 minutes, allowing the flavors to meld together harmoniously.

Spoon the pumpkin mixture into individual serving bowls and top each bowl with a dollop of creamy Greek yogurt.
