Ingredients
- 1 tablespoon olive oil
- 1 carrot, diced
- 1 stalk celery, diced
- 1 thin slice onion, diced
- 1/2 teaspoon chopped garlic
- 4 (8 ounce) cans tomato sauce
- 1 (14 ounce) can chicken broth
- 1 tablespoon dried parsley
- 1/2 tablespoon dried basil leaves
- freshly ground black pepper to taste
- 1 1/2 cups ditalini pasta
- 1 (15 ounce) can cannellini beans, drained and rinsed
Instructions
1
Heat a generous amount of olive oil in a medium-sized saucepan over the middle heat setting. Introduce sliced carrots, chopped celery, and diced onion into the pan; gently stir until they become tender. Add minced garlic to the mixture and briefly sauté it.
2
Combine the tomato sauce, chicken broth, chopped parsley, basil leaves, and a pinch of pepper in the pan; let it simmer for 20 minutes.
3
Meanwhile, bring a large container of salted water to a rolling boil. Add ditalini pasta and cook for 8 minutes or until it reaches the desired level of firmness; drain the excess water.
4
Add cooked beans and pasta to the soup mixture; let it simmer until heated through, taking around 1 or 2 minutes.
