Simple Minestrone Soup
Ingredients
  • 3 tablespoons olive oil
  • 3 cloves garlic, chopped, or more to taste
  • 2 onions, chopped
  • 5 carrots, sliced
  • 4 cups chicken broth
  • 2 (15 ounce) cans diced tomatoes with garlic and oregano
  • 1/2 cup red wine
  • 1 (16 ounce) package frozen green beans
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (10 ounce) package frozen chopped spinach
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh oregano
  • salt and pepper to taste
  • 1/2 cup seashell pasta, or more to taste
  • 1/4 cup freshly grated Parmesan cheese, or to taste
Instructions
1
Begin by heating oil in a large cooking vessel over medium-low heat settings. Next, add minced garlic and cook while stirring until it emits a fragrant aroma, taking approximately 2 to 3 minutes.
2
Subsequently, add sliced onions and cook while stirring until they exhibit slight softening, requiring around 4 to 5 minutes.
3
Following that, add sliced carrots and stir until they reach a heated state, taking roughly 1 to 2 minutes.
4
Now, pour in chicken broth and diced tomatoes; bring the mixture to a rolling boil by stirring constantly.
5
After that, add red wine and lower the heat to low; stir in green beans, pinto beans, spinach leaves, basil, oregano, salt, and pepper. Bring the mixture to a gentle simmer; then reduce the heat to medium-low and continue cooking until the vegetables are tender, approximately 40 minutes.
6
Concurrently, bring a large pot of salted water to a boiling point. Cook seashell pasta in the boiling water, stirring occasionally, until it reaches a cooked yet firm state to the bite, approximately 8 minutes. Drain pasta; then stir it into the soup.
7
Lastly, ladle the soup into bowls and top with grated Parmesan cheese.
