- 1 medium eggplant, peeled and sliced into 1/2 inch rounds
- 4 tablespoons mayonnaise, or as needed

Preheat your oven to the desired temperature of 350 degrees Fahrenheit, or equivalently 175 degrees Celsius.

Line a baking sheet with aluminum foil to ensure easy cleanup.

Next, prepare the coating station by placing bread crumbs in a small, shallow container.

Dip each eggplant slice on both sides into mayonnaise before coating it evenly with bread crumbs.

Arrange the coated eggplant slices on the prepared baking sheet.

Place the baking sheet in the preheated oven and bake until the eggplant slices develop a golden-brown crust on their bottom surfaces, approximately 20 minutes.
